This recipe can be altered to suit what you have on hand. It’s great for all those bits and pieces we don’t use during the week. I have used left of roast chicken, chicken strips, leg of ham, chorizo, cabbage etc.
The cream and the sour cream mixed into the curry really make this dish BUT you can leave them out if you don’t like cream and just have a simply curried pasta.
The pasta in tonights recipe was half penne and half spirals, previously I have also used fettuccine which was equally delicious.
The beans I used were just supermarket brand frozen beans.
For even more taste add a small amount of grated cheese.
- 500 g of your preferred pasta. Cooked until soft
- 2 Spring onions. Sliced
- 1 Cup Frozen Green Beans.
- 1/2 Cup Red Capsicum. Diced
- 1/2 Cup Cherry Tomatoes. Halved
- 200 ml Cream.
- 1 Dollop Sour Cream.
- Curry. to taste
- Salt & Pepper.
In a frying pan on medium heat, cook bacon, spring onions, beans, capsicum, and tomatoes.
Add cooked pasta.
Add curry to taste.
Add cream and stir through.
Add sour cream and stir thoroughly.
